Orange Creamsicle Icebox Cake

 

This plan-ahead summertime dessert just takes a few minutes to make - no baking required! Make sure to give the cake time to rest in the refrigerator to allow the cookies to soften into a cake-like texture.

Ingredients

3 cups heavy cream 
1- 8 ounce package cream cheese
1/2 cup sugar
2 teaspoons Orange Cream Flavor Fountain
1 package vanilla wafer cookies

Directions

1. Combine ingredients in the bowl of an electric mixer.  Mix on low speed until combined, then on high speed until stiff peaks form.
 
2. In an 8" springform pan, place wafer cookies in concentric circles to cover bottom of pan with one cookie in the middle.  Using a spatula, cover cookies with 1/5 of orange cream mixture, spreading to edge of pan. Repeat with 5 layers of cookies and ending with a layer of orange cream mixture.
 
3. Cover pan with plastic wrap and refrigerate 8 hours or overnight.
 
4. Remove sides of pan and slice.
